Our philosophy

Hand-picked quality and organic from the outset …

Our vineyards cover approximately 18 hectares on the slopes of the AOC Coteaux du Languedoc. The terroir, with its characteristic limestone soils and microclimate, gives our wine its special balance and refinement.

We cultivate high-quality grape varieties such as Grenache, Merlot, Syrah and Cabernet Sauvignon. When training and pruning the vines, we focus on quality rather than quantity. Our grapes are harvested and pre-selected exclusively by hand, then transported in small 10 kg crates (to prevent juice formation).

We compensate for changes caused by climate change on the one hand by selecting larger bunches. On the other hand, we have begun to protect our vineyards from excessive sunlight using photovoltaic slat systems. This allows us to leave the grapes to ripen longer in the vineyard and further improve quality.

… followed by perfection in the cellar

After being hand-selected and harvested in the vineyard, the grapes are washed in the cellar, sorted according to their ripeness and sugar content, and then carefully checked again on the sorting table.

To optimise the aroma and fruit content, the grapes are punched down several times a day in the tank (pigeage) and sprinkled with their own juice (remontage). 

Our wines are dry, i.e. fully fermented, cultivated and produced in accordance with EcoCert guidelines (organic).

Finally, our wine matures in French 225-litre oak barrels with a storage and maturation period of 6 to 48 months. 

Bottling takes place at our premises at Domaine Saint Eugène.
